Easy Lemon Embossed Shortbread Cookies
I have been infatuated with embossing rolling pins and their designs.
Last year I received my first set of embossing rollers and absolutely love them!
When it comes to embossing rollers, you can’t use just any ol’ shortbread cookie recipe. The recipe has to be modified to retain the embossing.
Below is my personal recipe that are oh so scrumptious.
Lemon Embossing Shortbread Cookies
1 cup soft room temperature butter
1 cup sugar
1 egg
1 tablespoon fresh lemon juice
Zest of one lemon
2 - 1/2 cups unbleached all purpose flour
Cream together butter and sugar until blended together. Add remaining ingredients and mix well.
Wrap dough in plastic wrap and refrigerate for at least 1 hour.
At baking time, preheat oven to 350 degrees.
Flour surface and roll out dough using a regular roller to 1/2 inch thick. Then, using the embossing pin, flour well before pressing and rolling the embossing rolling pin over the dough bringing the dough to 1/4 inch thick. If you use the handles, it will tear your dough. Cut cookies using your favorite cookie cutters and place on ungreased cookie sheet.
Bake for 10-12 minutes. DO NOT OVER BAKE or cookies will be too hard. Let cookies rest on cookie sheet for 1-2 minute prior to transferring to cooling rack.
Let cool and store in airtight container.
