Chickpea Salad & Lettuce Wrap

A week or so ago Jerry brought this super yummy chickpea salad home from the store. It was so delicious and we knew we could replicate it ourselves and make it even better. So yesterday Jerry did just that! And OH MAN is it good and better than the original!

This “salad” can be served in a lettuce wrap with avocado or even a soft tortilla with dark leafy greens, tomato and avocado. It is super filling and is a complete meal in and of itself. Below is the recipe!

Plant-Based Chickpea Salad

Recipe:

  • 1 cup of diced red onion

  • 1 carrot diced

  • 1/2 a jalapeno diced (optional)

  • 1 can garbanzo beans (chickpeas)

  • 1/2 can of corn (optional)

  • 1 tablespoon fresh lime juice

  • 2 tablespoons olive oil

  • 1/4 cup chopped cilantro

  • 1 teaspoon garlic powder (or 2 large garlic cloves)

  • 1.5 teaspoon cumin

  • Salt & Pepper to taste

Mix all ingredients in a bowl and enjoy! Can be refrigerated for up to 5 days.
