Homemade Granola Hippie Style

I’ve been a Birkenstock wearing wannabe hippie since before wearing Birkenstocks were a cool fad in the PNW. But the other week I took my wannabe hippie status to a whole new level! I MADE GRANOLA! Yes! Yes I did! And it is so crazy good that I am questioning myself on why it took me THIS long to realize 1) it’s crazy easy to make and 2) WAY more cost effective then buying it in the store. Plus, it makes the house smell divine!

The recipe I was inspired by and slightly modified from The China Study Cookbook. You can literally add whatever dried fruits or nuts you want to your granola to bake. Here’s what I put in mine:

Homemade Granola Hippie Style

In a large bowl combine:

  • 1 cup shredded unsweetened coconut

  • 4.5 cups old fashioned oats

  • 1.5 cups nuts of your choice (I used a premixed blend of unsalted nuts that had almonds, cashews, walnuts, pistachios, and hazelnuts from Costco)

  • 1/2 cup of raisins (or other dried fruit of your choice).

In small sauce pan on medium heat combine the following ingredients and heat until sugar is dissolved:

  • 1 cup of water

  • 1/3 cup real maple syrup

  • 1/2 cup of raw sugar

Pour liquid over dry ingredients until combined. Spread onto a cookie sheet with parchment or silpat and bake at 300°F for 60-75 minutes stirring every 15 minutes until golden brown. Let cool then store in an airtight container and enjoy as cereal, granola trail mix, or add to yogurt.

It is DELICIOUS and just might make you want to buy your very own Birkenstocks as well! LOL Have I told you Birkenstock now has a RUBBER sandal?!? Yup! And they are awesome! Ha!
